JULIE'S TOMATO AND MINT SALAD
SERVES 4-6 as accompaniment
Prep time: 10 minutes
1kg ripe tomatoes, cut into wedges
2 cups mint, roughly shredded, plus a few whole leaves to garnish
1 red onion, very finely sliced
¾ cup olive oil
¼ cup red wine / balsamic vinegar
2 tablespoons whole grain mustard
1 tsp sugar 
Salt to taste

Combine tomato, mint and onion in a bowl.

Combine oil, red wine vinegar, mustard, sugar and a pinch of salt in a separate bowl and combine well.

Allow the salad to come to room temperature before serving.  Pour the dressing over the salad just before serving.
