Salted Caramel Traditional Ice Cream
A Salted Caramel Traditional Ice Cream (Custard Style) recipe for all occasions, featuring The Ultimate Scoop Ice Cream Maker by Baccarat.
- 1 cup caster sugar
- 2 cups full fat thickened cream, divided
- 1 cup full fat milk
- 5 eggs yolks
- 1 tsp flaky sea salt such as Maldon
- ½ tsp pure vanilla extract
Important: Place the freezer bowl in the freezer for at least 12 hours prior to preparing your ice cream mixture.
- Heat 1 cup sugar in a small saucepan over medium heat, stirring with a spoon to heat sugar evenly, until it starts to melt, then stop stirring and simmer, until it is golden caramel.
- Slowly add 1 cup of cream (mixture can spatter) and cook, stirring, until all of caramel has dissolved. Transfer to a bowl and stir in sea salt and vanilla. Cool to room temperature.
- Meanwhile, bring milk and remaining cup cream, just to a boil in a small heavy sauce pan, stirring occasionally.
- Lightly whisk yolks in a medium bowl until frothy, then add half of hot milk mixture in a slow stream, whisking constantly.
- Pour back into saucepan and cook over medium heat, stirring constantly with a wooden spoon, until the custard thickens and coats the back of the spoon (do not let boil). Remove from the heat.
- Stir in cooled caramel mixture.
- Cool custard, stirring occasionally, in an ice bath and cool down to 5-10˚C.
- Set time to 30 minutes on Baccarat The Ultimate Scoop Ice Cream Maker and press power button on.
- Pour mixture into chute.
- Either eat immediately or transfer to an airtight container and freeze for 1-2 hours for a firmer texture.
About Ice Cream Makers
Ice cream makers are indispensable tools for individuals who have a passion for cooking or enjoy making their own ice cream. These machines provide a convenient and efficient method for producing delicious homemade ice cream, sorbets, and gelatos right in the comfort of your own kitchen. By simultaneously churning and freezing the mixture, ice cream makers ensure a smooth and creamy texture that is difficult to achieve with alternative methods. One of the main advantages of using an ice cream maker is the control it grants over the ingredients. By making your own ice cream, you have the freedom to select high-quality, fresh ingredients and avoid artificial additives and preservatives commonly found in store-bought options. This allows you to create healthier and more personalised frozen treats that cater to specific dietary needs or preferences.
When choosing an ice cream maker, it is important to consider factors such as capacity, freezing time, and ease of cleaning. Machines with larger capacities are ideal for frequent entertainers or those with large families, while smaller models are suitable for individuals or couples. Freezing time can vary among models, so it is crucial to select one that aligns with your patience level. Additionally, features that facilitate easy cleaning, such as removable parts and dishwasher-safe components, can simplify the post-ice cream-making process.
With an ice cream maker at your disposal, the possibilities for crafting delightful frozen desserts are endless. From classic flavours like vanilla and chocolate to more adventurous combinations such as salted caramel or mint chocolate chip, you can experiment with a wide range of recipes and customise them to your liking. Whether you are hosting a summer gathering, commemorating a special occasion, or simply treating yourself to a sweet indulgence, an ice cream maker is a valuable tool that will elevate your dessert game and impress your guests.
In conclusion, investing in an ice cream maker is a wise decision for any home cook seeking to expand their culinary repertoire. With the ability to control ingredients, create unique flavours, and experience the satisfaction of homemade frozen treats, an ice cream maker is an essential tool for establishing expertise in the realm of recipes.
